Roasted-Cauliflower-Lentil-Tacos

Here is another favorite recipe in the Lessing home – it is a little more time intensive than some of our usual weeknight recipes, so it is a special treat when we have it on the menu.  This recipe is from Kate from the blog Cookie and Kate.  Kate is a photographer and chef and we love her vegetarian recipes!  

This taco recipe is hearty, healthy and reheats well for leftover lunches.  Between the cauliflower, lentils, and corn tortillas, this recipe is filled with vitamins and minerals, lots of fiber and healthy fats and protein.  In the recipe Kate roasts the cauliflower in the oven, but my husband, Collin, tosses the cauliflower in olive oil and cooks it on the grill (at about 450 degrees for about 5 minutes).  We skip the chipotle sauce and sometimes add guacamole instead.  We top the tacos off with our homegrown cilantro.  Enjoy!
